Best Buttermilk Pancakes

For me Sundays are for the pancakes (after namastay in bed!). After years and years experimenting for the best pancakes ever, I think I have finally nailed it! You can eat them with icing sugar, maple syrup or blueberry (my favourite!).

2 eggs

500 ml buttermilk

75 gr butter, melted

2 drops of vanilla extract or 1 vanilla bean

500 all-purpose flour

50 gr granulated sugar

5 gr salt

10 gr baking powder

5 gr baking soda

vegetable oil for cooking


In a bowl, beat the eggs with a mixer until frothy. Add the buttermilk, butter and vanilla and mix well.

Sieve the flour into another bowl. Mix in the sugar, salt, baking powder and baking soda. Mix in the dry ingredients to the egg mixture slowly, beat on medium speed for 3 minutes. In case you have any lumps after beating; ignore it! A few lumps are not sins for a pancake batter.

Heat a non-stick pan and cook the pancakes with the vegetable oil. Flip the pancakes when the top are covered with tiny bubbles.

    die sehen aber köstlich aus! Das Rezept muss ich mir gleich mal ausdrucken und checken, ob ich alle Zutaten habe. Hoffentlich – dann gibts nämlich morgen auch bei mir Pancakes!
