Bulgur Salad with Grilled Chicken and Veggies

Bulgur salad is one of my favourite lunch options (my girls like eating it before our night outs though). Push the envelope a bit by adding grilled veggies and chicken (leave out the chicken for the veggie option). Grill away yo!



2-3 Portions

300 gr chicken breast

1 zucchini, cut into mouth bite pieces

100 gr mushrooms, cut into mouth bite pieces

for the marinade

1 clove garlic, crushed

2 tsp powdered coriander / cilantro

100 ml vegetable oil

salt and pepper

for the bulgur salad

150 gr bulgur

variety of lettuce

2 twigs of parsley, chopped

for the bulgur salad dressing

1 tbs tomato paste

3 tbs olive oil

1 tsp paprika powder

juice of 1/2 lemon

salt and pepper



Combine the marinade ingredients then coat and toss the veggies and chicken with it. Grill the chicken and veggies on a griddle pan over medium-high heat until brown.

Meanwhile cook the bulgur according to the package instructions. Combine the dressing ingredients in a bowl.

When the bulgur is ready, mix in the dressing evenly. Toss in the lettuce and grilled veggies. Put the grilled chicken on top and garnish with parsley.
