Cinnamon Rolls with Almond (with vegan option)

Every time I have a sleepover guest at home, I bake cinnamon rolls for breakfast. The smell of cinnamon rolls is so fragrant, you don’t need to wake your guest up!

For the dough

500 gr strong white flour

75 gr granulated sugar

14 gr dry yeast

2 drops of vanilla extract

100 gr butter (melted)

250 ml luke warm milk (room temperature)

For the filling

100 gr brown sugar

5 gr cinnamon

50 gr almond leaves (or any filling you like)

50 gr butter (melted)

2 drops of vanilla extract

For the glaze

50 gr butter (melted)

100 gr confectioners sugar

5-6 tsp of milk

2 drops of vanilla extract

Melt all 200 gr of butter, then add in the vanilla extract to butter. Mix flour, sugar and dry yeast for the dough. Combine the butter and milk, then stir in to the dough. Knead the dough for five minutes until soft and not sticky. Leave them to rise for one hour until double in size.

In the meantime, mix sugar and cinnamon for the filling. When the dough is ready, punch down and roll out the dough on floured surface. Spread the melted butter over the dough, sprinkle them with cinnamon sugar and almond leaves. Cut them into 12 pieces and put them into a greased baking tin. Leave them to rise for another 30 to 45 Minutes until double in size.

Preheat the oven to 200 degree C / 395 F.

Put the cinnamon rolls in the oven (lower third). and bake for 30 minutes until brown and fragrant.

In the meantime, mix the sugar and butter for the glaze. Mix in the milk one spoon at a time until the glaze get a nice consistency. Pour the glaze on cooled down cinnamon rolls.
