Many people think one must cook broccoli before eating. Nope! You can also make a healthy broccoli salad. It is healthier, because the vitamins of the broccoli are better retained. The salad is light and fresh for hot summer days. You can easily make this salad for BBQ as a side dish as well.
2 big Portions / 4 small Portions
1 broccoli head
1/2 red onion
1 yellow pepper / paprika (another colours would work as well, I prefer the yellow one for the rainbow color result) 🙂
100 gr of herbs cream cheese
100 gr of half fat mayonnaise
juice of 1/2 of lemon
50 gr cashews
salt an pepper
cut the vegetables and apple into bites size pieces and mix them into a bowl. Mix the cream cheese, mayonnaise and the lemon juice in another bowl then fold them evenly into the salad bowl. Add the cashew and season with salt and pepper.
