Orange and grapefruit are one of my favourite fruits. Combine them with fennel and you will get one plate of healthy yet tasty salad or add the bread roll and walnut feta dip and you will get a light yet filling meal.
4 tablespoon of olive oil
1 tablespoon of honey
1 bunch of coriander / cilantro
2 spring onions
1 chili, chopped (leave the seeds out if you do not like it spicy)
50 gr walnut
salt and pepper
Cut the fennel, grapefruit and orange into bite size pieces. Sautée fennel using olive oil at medium heat until it gets a softer but still have that crunchy consistent. Season with salt, pepper and honey.
Mix the grapefruit and orange in bowl. Mixed in the fennel, coriander leaves, lime juice, chili, spring onions and walnut. Toss them together until evenly coated. Season with salt and pepper.
