Rhubarb Nectarine Cake

I like the combiantion of sweet and sour from rhubarb and nectarine. That is why I make the effort to cook the jam myself. No worries if you have less time you can also buy and use strawberry, blueberry or any jams you fancy!

for the compote / jams:

100 gr frozen or fresh rhubarb

100 gr nectarine flesh

100 gr canning sugar (2:1) variation

lemon zest

for the crust:

200 gr lady fingers

125 gr soft butter

optional: almond extract

for the cake:

550 gr cream cheese

125 gr white chocolate

100 gr granulated sugar

2 drops of vanilla extract

2 medium sized eggs

1 tablespoon corn starch

400gr sour cream

25 gr granulated sugar

2 drops of vanilla extract

1 nectarine and some chop rhubarb to garnish

Cook the jam according to the instructions on the packet of the cannig sugar. Add the lemon zest.

Melt the butter at a low heat. Crush the lady fingers using kitchen mashine or put them in a freezer bag and crush with rolling pin. Mix in the butter, press the mix tightly to the greased cake tin bottom (26 cm diameter). Leave to coll.

Preheat the oven to 200 degree C / 390 F.

Melt the chocolate using water bath. Beat the cream cheese using a hand mixer. Beat the sugar and vanilla extract in. Wisk in the eggs one by one, beat in with a high speed.

Add the corn starch and the white chocolate and beat them together. Fold in the jam with a spatula.

Pour the mixture evenly on the crust, put it on the oven for 45 minutes, then leave to cool for 25 minutes.

Beat the sour cream, sugar and vanilla extract and pour them on the cooled down cake.

Bake for another 5 minutes then leave to cool for at least one hour.
